I am new to detailing / washing as my the RS is my first real "nice" car. I just bought it a little over a week ago and already have bugs. I don't have the set-up yet to do two-bucket and I was wondering if for this one time I could do touchless and then I have an appt with an auto spa nearby who will do the next wash and from whom I will also get a ceramic coat.

One time touchless shouldn't hurt right?

I went to Brighton in Naperville for Ceramic Coating about 2 years ago it still looks great.

I know, the double bucket wash method discussion has come and gone, but this A.M. I cheated!
I was in a hurry and single bucket washed. (my wife’s Escape) It reminded me how important that technique is. If you’re one of those who doesn’t do this, you’re not doing your car any favors.
This pic doesn’t really show the scrud you grind into the surface using one bucket.

My detailer told me to foam cannon the car, pressure wash it, foam it again, then single bucket wash (with the bucket bottom grill).... otherwise a double bucket sounds good

Sounds reasonable. I use those grills too, and am convinced they work!
If you ever decide to double bucket, I recommend two different color buckets for wash & rinse. Once the rinse gets soapy, some people could confuse them, not me, of course.
